Chris’s Favorite Peanut Butter Cookies

Chris will eat pretty much anything. Unless it’s a vegetable, and then you can’t get him to eat it for ANYTHING. I think that if you offered him one million dollars to try a taste of a Brussels sprout, he would not take you up on it. But even if it’s not vegetables, that guy can put away some food!! Big 9×13 casseroles are his jam. Hearty steaks and potatoes are ALWAYS a yes, and he loves some rolled up meat and cheese as a snack.

Chris can be very impartial about lots of things, because truly nothing bothers him. Which is a great personality trait, but sometimes hard when coming up with things to make ;) I want to make food that will blow his mind, but the truth is that if there’s protein and it tastes good, that’s good enough for him.

So even though he is totally okay with most anything I’d make for him, when I find something that I know he loooooves, I latch onto it! And these cookies are one of those things! He originally brought me a recipe book from his house, and told me that he used to make these cookies and he really liked them. So I made them for him, and he loves them! He can eat 6 or 7 in just one sitting, hahaha. His favorite is when I put them in for exactly 8 minutes and pull them out while they look under baked. Then after they sit for a few more minutes, they’re super gooey and delicious!

I try to have some sort of dessert on hand for him, especially so he can put something in his lunchbox that’s sweet, and these are the perfect cookies for that! I’ll whip up the dough, and keep it in the fridge until I’m ready to bake them. I’ll usually do a tray or two at a time, to keep some in the cookie jar, and then make a few in the evenings when we want a fresh cookie with some vanilla ice cream ;) SO good and so incredibly easy!!

Chocolate Chip Peanut Butter Cookies
A perfect-every-time peanut butter cookie, with delicious chocolate chips!

Ingredients
  1. 1 cup butter
  2. 1 cup white sugar
  3. 1 cup brown sugar
  4. 2 eggs
  5. 1 cup peanut butter
  6. 2 1/2 cups all-purpose flour
  7. 1 tsp baking soda
  8. 1 tsp vanilla flavoring
  9. 1 1/2 cups chocolate chips
Instructions
  1. Preheat oven to 375. Cream butter until smooth. Add both sugars and cream well again. Add eggs and beat. Then add peanut butter. Sift dry ingredients and add to above wet mixture. Mix well and add vanilla flavoring. Fold in chocolate chips by hand. Drop cookies on baking sheet (silicone mat or spray with non-stick spray!) and bake for 8-12 minutes, or until slightly brown on the outsides. Let the cookies sit on the baking tray for 5 minutes to let them finish baking.
Notes
  1. I will sometimes make this ahead of time, and leave the cookie dough in the fridge. Then whenever we want some cookies, I can make a few that are fresh! I keep it in a plastic container, with plastic wrap underneath the lid to make sure it's completely sealed.
